Zucchini Bread

Ingredients
3 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
4 egg whites
2 cups sugar
3/4 cup vegetable oil
2 teaspoons vanilla extract
3 cups zucchini, unpeeled, chopped or shredded
1 cup chopped walnuts


Directions

Combine the first 5 ingredients and set aside. Beat the egg whites until past the frothy stage, but not yet soft peaks. Add the sugar while continuing to beat. Pour in the oil, vanilla, zucchini, and nuts and beat until well mixed. Pour into two 9 x 5-inch loaf pans that have been greased and floured. Bake at 350° for 1 hour or until done. Cool in pans for 10 minutes, and then turn out in wire rack to finish cooling.


Note: Make this bread when you've found a zucchini hiding in your garden that's too large to use for anything else.
