Zesty Zucchini Casserole
6 slices bacon
1 C chopped onion
1 large clove garlic, chopped
6 cup cubed zucchini
2 cup sliced mushrooms
1 tsp. salt
1/4 tsp. pepper
1 can tomato sauce
1 cup shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
3 Tbsp. butter, melted
1/2 cup bread crumbs (Italian, seasoned)

Mix together the cheddar cheese and mozzarella cheese; set aside.

In large skillet, fry bacon. Drain well on paper towels. Pour off grease and return 2 tablespoons to skillet. Add onion and garlic; saute 1 minute. Add zucchini, mushrooms, crumbled bacon, salt and pepper and continue to saute for five minutes.

Ladle half of mixture into a two-quart casserole dish. Add 1/2 cup tomato saue and sprinkle half of cheese over mixture. Add remaining mixture; cover with remaining tomato sauce and cheese. Add bread crumbs to melted butter and mix well. Sprinkle over top evenly. Cover and cook in 350 degree oven for 30 to 40 minutes. Uncover last 10 minutes.
