1 tsp. orange peel
3/4 c. orange juiced
1 egg, well beaten
2 T. cooking oil
2 c. flour
3/4 c. sugar
1-1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. coarseley chopped fresh or frozen cranberries
1/2 c. chopped walnuts
Preheat oven to 350°. In mixing bowl, combine orange juice, orange peel, egg and oil. In another mixing bowl: Stir together flour, sugar, baking powder, salt and baking soda. Add orange juice mixture to dry ingredients, stir until moist. Stir in cranberries and walnuts. Pour batter into lightly greased loaf pan. Bake in 350° oven for 50 to 60 minutes or till wooden pick inserted into center comes out clean. Cool on wire rack.
For Glaze: Stir in 1 tablespoon of reserved orange juice into powdered sugar. Drizzle atop loaf.
